This one is going to be in one language only, that being english.
Time really does fly. Daughter already 2,5 yrs, the restaurant well over one year now. Wow. It has been quite the ride and I feel very fortunate, since the upcoming fear of recession and the amount of new restaurants in Helsinki haven’t really affected our flow.
And with upcoming press in Finland, Holland, Switzerland and Dubai gives me a good feeling for 2012. Most importantly, whatever happens in 2012, the most important thing with Chef & Sommelier is to keep our focus and our personal way of doing things. They are what got us here and they (I feel) are also the things that will open further doors for us.
Upcoming:
My first guestplay in Tampere, Restaurant Henriks the 3rd and 4th of February.
The 17th and 18th of February we are being visited by Pure Berlin, who make their stand on german cuisine in our miniscule restaurant taking in only 22-30 guests per night. 11 course menu with treats from east and west. 100% Pure genius, I think.
Also more wild herbs and home grown veg when it’s time for them.
I feel that 2012 will be a year with a lot to handle, so I’m going to keep my seatbelt fastened even if the fasten seatbelt-sign has been switched off momentarily. Why? Just to keep my feet on the ground and to focus on the number one- the guests.
Finesse dining for me has always been about trying to make the right choices for the guests- I promise to try to keep it as good as it has been until now.
